I have often thought if I wasn't a librarian I'd like to be an Architect or City Planner, therefore I eagerly seek out books on these topics.  The book Cities: Discover How They Work not only discusses everything involved in creating and sustaining a city, but it provides projects such as creating your own city planning game and making a city growth flip book.  Don't let the basic black and white graphics deter you, this book is an excellent choice for parents looking for STEM reading and activities material.
